I am a big fan of yoghurt and I love to mix it with some fruits for different flavours. As I always adapt the flavours to the seasonal fruits, I decided to make this three-coloured yoghurt:

  • 1 apricot
  • 1 small bowl of redcurrant
  • 250g of (low fat) natural yoghurt
  • 1 tea spoon of lemon juice (optional)

Divide the yoghurt into three equal parts. Cut the apricot into small pieces and blend them with the yoghurt until smooth. Repeat the same with the second part of the yoghurt and the redcurrant (as redcurrant is quite sour, I did not put all of it into the yoghurt but slowly added more to keep it sweet). The third part stays plain, I added one tea spoon of lemon juice for some kick. This step is optional. Layer the three parts in a glass or bowl and enjoy!
