On these hot summer days, we need something to cool us down. Watermelon is one of my favourite summer fruits, it is so refreshing. My watermelon granita is the one thing you need to make your summer days even better. And the best thing is, it is not only refreshing but also healthy!

You need:

  • 1 quarter of a watermelon
  • Juice of half a lemon
  • Optional: mint

(Serves 4)

Cut the watermelon into pieces and remove the seeds and put them into a blender. Add the lemon juice and 2-3 mint leaves (optional) and blend until smooth. Put the watermelon-lemon mix into a bowl, cover it with some foil and put it into the freezer. After one hour, take it out, stir it and put it back into the freezer. Repeat 4-5 times every hour to make sure that you get the typical “granita texture” (very small pieces).
