I am still obsessed with rhubarb! And after making the compote, I thought about ways how to add more rhubarb to my favourite food. Every morning, I start the day with some porridge. And it turned out that rhubarb and porridge work really well together.

This is my recipe:

  • Half a bowl of oats
  • About the same amount of water (alternatively, you can use water and only a bit of milk if you would like less dairy products)
  • Half a teaspoon of ground cinnamon
  • Rhubarb compote (get my recipe here)

Heat up the milk (water) and add the oats. Stir a bit until the oat-milk-mix gets smooth. Take it from the stove and let it rest for about 5 minutes. Add the cinnamon, stir it and put it in your bowl. Add the compote.
